

Chicken Chickpea Curry

Ingredients
- 4 plum tomatoes, quartered
- 2 shallots, chopped
- 1 2-inch piece ginger, peeled
- 1 jalapeño pepper, seeded and chopped
- 1 teaspoon curry powdered
- 3 tablespoons olive oil
- 2-15 oz. cans chickpeas, drained and rinsed
- 2 cooked chicken breasts, shredded
- 2 cups frozen okra
- 1/2 cup cilantro, chopped
- Naan bread for serving
Instructions
- Add the plum tomatoes, shallots, ginger, jalapeño, curry powder and 1 teaspoon salt to a food processor and pulse until smooth. Heat the olive oil in a large pot over medium-high heat. Add the tomato mixture and cook until thick, 10 minutes. Add in 1 cup water and bring to a simmer. Add in the chickpeas, chicken breasts, frozen okra and cilantro and cook until okra is tender, 5 minutes. Serve in large bowls with warmed naan bread.
