Cheddar Cheese Gougères

Ingredients
- 1 cup water
- 3 tablespoons butter
- 3/4 teaspoon salt
- 1 cup flour
- 4 eggs
- 1 cup sharp cheddar cheese, shredded
- 1/4 teaspoon pepper
Instructions
- Preheat the oven to 400 degrees and spray two baking sheets with pam. Bring the water, butter, and salt to a simmer in a large pan over medium heat. Once the butter had melted, at the flour and stir quickly with a wooden spoon until a ball of dough forms. Place dough in a large bowl and using an electric mixture, beat in the eggs, one at a time. Make sure the egg is completely incorporated before adding the next. Stir in the cheese and pepper. Drop tablespoons of dough onto the baking sheets, leaving about 3 inches of room in between ( expect them to expand quite a bit when baking). Wet your finger and press down any peaks of dough. Bake for 20 minutes or until golden brown. The gourgeres should be slightly eggy in the middle, but crisp on the outside. Serve warm or hot.
Notes
- These can be made up to a day ahead of time. Reheat by placing in a 350 degree oven for 5 minutes. The microwave tends to make them soggy.
