Ingredients
  1. 1 sheet frozen puff pastry, thawed
  2. 3 tablespoons butter
  3. 1/2 cup dark brown sugar
  4. 1/2 teaspoon sea salt
  5. 1/8 teaspoon cinnamon
  6. 5 large bananas, peeled and halved
  7. 1 teaspoon vanilla extract
  8. 2 tablespoons Bourbon
  9. Vanilla ice cream, optional
Instructions
  1. Preheat the oven to 400 degrees. Roll out the thawed puff pastry sheet on a floured work surface to a 10-inch circle. Place between two pieces of wax paper and transfer to the fridge until needed. In a 10-inch oven safe skillet, melt the butter over medium-high heat. Stir in the sugar, salt and cinnamon and cook until amber, 3 minutes. Arrange the bananas in an even layer in the skillet, overlapping slightly. Cook without stirring, 3 minutes. Add the vanilla and bourbon and cook until slightly thickened and liquid has evaporated, 3 minutes. Remove from the heat and place the pastry dough on top of the bananas. Transfer to the oven and bake until golden brown and puffed, 25 minutes. Remove from the oven and carefully invert onto a serving plate. Cut into segments and serve each with a heaping scoop of vanilla ice cream.
