Brussels Sprout Slaw

Ingredients
- 1 lb Brussels sprouts
- 1 cup toasted pecans, chopped
- 4 oz. crumbled blue cheese
- 1 apple, sliced
- 6 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 2 teaspoons Dijon mustard
Instructions
- Wash the Brussels sprouts and pat dry. Thinly slice and transfer to a large bowl, using your fingers to separate the leaves. In a small pan, toast the pecans over medium heat until slightly browned, 7 minutes. Add to the bowl along with the apple, and blue cheese. In a medium bowl, whisk together the olive oil, vinegar and Dijon mustard and season with salt and pepper. Add to the bowl, tossing to coat everything.
