Broccoli, Chicken Sausage & Parmesan Penne

Ingredients
  1. 1 lb fusilli pasta
  2. 1 lb chicken sausage, I used Trader Joe's Garlic-Herb Chicken Sausage
  3. 2 large bunches fresh broccoli
  4. 2 cloves garlic, minced
  5. 2 lemons
  6. 4 oz. parmesan cheese
Instructions
  1. Preheat the oven to 425 degrees and line two baking sheets with foil. In a large skilled, heat 1 tablespoon olive oil over medium-high heat and add the sausage. Cook until browned, 10 minutes a side. Remove from the pan and transfer to a cutting board, slicing into 1 inch pieces. Meanwhile, cook the pasta according to the package instructions. Reserve 1 cup of cooking liquid before draining. Cut the broccoli into florets, discarding the stalk. Add to a large bowl along with the garlic, 2 tablespoons olive oil, salt and pepper, tossing to coat. Transfer the broccoli to the two baking sheets and roast for 12-15 minutes or until slightly crispy, stirring halfway through. When the pasta is ready, drain and add to the pot. Add the zest and juice of 1 lemon, 1 cup reserved pasta water, 2 tablespoons olive oil and parmesan cheese. Add the roasted broccoli and chicken sausage, tossing to combine. Taste and season with more salt, pepper and lemon juice if you like.
