Ingredients
- 1 1/2 cups sugar
- 2 sticks butter, cold
- 3 cups flour
- 4 cups blueberries
- 1 lemon, zest and juice
- 1 egg
- 1 teaspoon baking powder
- 4 teaspoons cornstarch
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375 degrees and spray a 9 x 13 baking pan with pam. In a medium bowl stir together 1 cup sugar, flour, baking powder, salt and lemon zest. Use a fork and add butter and egg. Pat half of the crumbly dough into prepared pan. In a separete bowl combine 1/2 cup sugar, cornstarch, lemon juice, and blueberries. Sprinkle mixture over crust. Crumble remaining dough over blueberry layer. Bake for 45 minutes or until top is golden brown. Cool completely before cutting into squares. (will be messy if you don't wait for them to cool)
