Crust
- 2 cups graham cracker crumbs, about 30 squares
- 1/2 teaspoon cinnamon
- 1 stick butter, melted
Filling
- 2- 8 ounce blocks cream cheese, softened, I use Philadelphia Light
- 3 eggs
- 1 cup sugar
- 1 pint sour cream
- 1 lemon, zest
- 1 teaspoon vanilla extract
Blueberry Topping
- 1 pint blueberries
- 1 lemon, zest & juice
- 2 tablespoons sugar
Instructions
- Preheat the oven to 350 degrees and grease an 8-inch spring-form pan with pam. Using a food processor, pulse the graham crackers until finely ground. Add to a large bowl along with the cinnamon and melted butter, stirring to combine. Pour the crumbs into the pan and press down using a measuring cup, including 1 inch up the sides. Bake for 5 minutes or until lightly browned.
- To make the filling, in a large bowl, beat the cream cheese until smooth and free of any lumps, 3 minutes. Add the eggs, 1 at a time, and beat until combined. Gradually add the sugar and beat until incorporated, 3 minutes. Add in the sour cream, lemon zest, and vanilla and beat again. Pour the filling into the crust. Set the cheesecake pan in a small cake pan, and place that pan in a larger roasting pan. Fill the roasting pan halfway with water (this will result in a creamy cheesecake). Bake for 45 minutes or until the middle is set. Transfer to the refrigerator to chill for at least 4 hours and up to overnight. While the cheesecake is chilling, make the blueberry sauce by adding all the ingredients to a large pan. Bring to a boil, and simmer over low heat until the berries are slightly broken down, 7 minutes. Transfer to a bowl and cool in the fridge. When the cheesecake is done chilling, unmold from the spring-form pan and transfer to a serving plate. Cut into slices using a knife dipped in warm water (this helps keep the cheesecake in nice, neat slices), and top with blueberry sauce. You can also top the entire cheesecake with the blueberry sauce before cutting into slices if you wish.
