Black Bean & Corn Salsa

Ingredients
- 1/4 cup olive oil
- 2 teaspoons honey
- 3 limes, juice
- 2- 15 oz. cps black beans
- 1 cup corn, fresh or frozen
- 1 red pepper, diced
- 5 scallions, chopped, greens
- 1/2 cup fresh cilantro, chopped
- 1 avocado, diced
Instructions
- In a large bowl, whisk together the olive oil, honey and lime juice. Rinse and drain the two cans of black beans and add to the bowl along with the remaining ingredients, tossing to combine. Season with salt and pepper and serve plain or alongside chips for dipping.
