Ingredients
  1. 1 tablespoon olive oil
  2. 1 red onion, sliced
  3. 1/4 teaspoon salt
  4. 1/4 teaspoon pepper
  5. 2 garlic cloves, minced
  6. 1 1/2 chicken breasts, cooked and shredded
  7. 1 1/2 cups BBQ sauce
  8. 1 lb pizza dough
  9. 6 oz. sharp cheddar cheese, grated
  10. 4 oz. gouda cheese, grated
  11. 1 cup corn, frozen or fresh
  12. 1/4 cup fresh cilantro
Instructions
  1. Preheat the oven to 450 degrees and spray a pizza baking pan with pam. Heat the olive oil in a medium pan over medium heat. Add the red onion, salt and pepper and cook, 5 minutes. Add the garlic, chicken and 1/2 cup of the BBQ sauce. Roll out the pizza dough on the baking pan until it fits. Spread the remaining BBQ sauce over the dough. Add the cheddar cheese and then the chicken mixture in an even layer. Sprinkle the corn over the pizza and cover with the gouda cheese. Bake until the cheese is golden and bubbly, 30 minus. Remove pizza from the oven and cover with the cilantro. Let cool 10-15 minutes before slicing.
