Baked Mini Lasagna Cups

Ingredients
- 24 wonton wrappers
- 1/3 pound ground turkey
- 1 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- 1 cup pasta sauce
- Fresh basil, for garnish
Instructions
- Preheat oven to 375 degrees and spray a muffin tin heavily with pam. In a medium pan, cook the turkey until brown,10 minutes, and season with salt and pepper. Reserve the meat in a small bowl. Press a wonton wrapper into the bottom of each muffin tin. Then layer the cheeses, adding around a tablespoon of parmesan, ricotta, and mozzarella to the bottom of each. Top each with a tablespoon of meat then a tablespoon of pasta sauce. Repeat the layers again (wonton, parmesan, ricotta, mozzarella, meat, pasta sauce). Top each with another tablespoon or so of mozzarella cheese and bake for 18-20 minutes or until the edges are brown. Let cool for 5 minutes before removing from tins. Garnish each with julienned basil and serve warm.
Notes
- You can always make these ahead of time and reheat in the microwave when ready to serve.
