

Baked Goat Cheese Dip

Ingredients
- 10 oz. log of goat cheese
- 4 oz. cream cheese, room temperature
- 1/4 cup parmesan cheese
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, quartered
- 2 teaspoons cilantro or chives
- 1 teaspoon balsamic vinegar
- 1 garlic clove, minced
- toasted baguette slices or crackers for serving
Instructions
- Preheat the oven to 400 degrees and spray a 1-quart baking dish with pam. In a food processor, combine the goat cheese, cream cheese, parmesan and 1 tablespoon olive oil, pureeing until smooth. Season with salt and pepper to taste and transfer the mixture to the dish. Bake until golden and heated through, 15 minutes. Meanwhile in a small bowl, combine the tomatoes, cilantro or chives, vinegar, garlic, 1 tablespoon olive oil and 1/4 teaspoon salt. Spoon on top of the cheese and serve with toasted baguette slices or crackers.
