Ingredients
  1. 7 medium red- skinned potatoes, quartered
  2. 1 sweet potato, peeled and cut into large chunks
  3. 1/4 cup mayo
  4. 1 tablespoon dijon mustard
  5. 2 teaspoons onion powder
  6. 2 teaspoons garlic powder
  7. 1/4 teaspoon cayenne pepper
  8. 2 slices bacon, cut into 1/4 inch pieces
  9. 1/4 cup olive oil
  10. 2 tablespoons red wine vinegar
  11. 2 scallions, chopped
  12. 2 tablespoons fresh parsley, chopped
  13. salt and pepper
Instructions
  1. Put the red potatoes in a large pan and cover with cold water by 2 inches. Bring to a boil over high heat. Once the water begins to boil, after about 10 minutes, add the sweet potatoes, and cook until tender but still firm, 10 more minutes. Cook the bacon in a small skillet over medium heat until crisp and set aside to cool in the skillet. Once cool, pour the bacon drippings in a large bowl along with the olive oil, vinegar, mayo, mustard, onion powder, garlic powder, cayenne, scallions, parsley, salt and pepper, whisking all together. Add the potatoes to the bowl, tossing to coat. Serve warm or cold!
