Bacon-Scallion Cornbread

Ingredients
- 1 cup flour
- 3/4 cup cornmeal
- 3 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup buttermilk
- 2 eggs
- 6 slices bacon, chopped
- 1 bunch scallions, green & white parts, sliced thin
- 3 tablespoons butter
Instructions
- Preheat the oven to 425 degrees and spray a 10-inch round baking pan with pam. In a medium bowl, combine the flour, cornmeal, sugar, baking powder, salt and pepper together. In a small bowl, whisk together the buttermilk and eggs. Add the buttermilk mixture to the flour mixture, mixing to combine. In a large skillet over medium heat, cook the bacon until golden, 5 minutes. Add the scallions and butter and cook until soft, 3 minutes. Add to the batter, along with the bacon grease. Transfer the mixture to to the baking pan and bake for 20 minutes, or until a toothpick in the center comes out clean. Let cool completely before removing from the pan, 15 minutes.
