Bacon-Pineapple Burgers w. Candied Jalapenos & Sirarcha Aioli

Ingredients
- 4 jalapeños, sliced
- 1/4 cup apple cider vinegar
- 3/4 cup sugar
- 1/2 teaspoon garlic powder
- 4 pineapple rings
- 2 tablespoons butter
- 1 lb ground beef
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 garlic cloves, minced
- 6 oz. fontina or white cheddar, sliced
- 4 slices bacon, cooked
- 1/2 cup mayo
- 3 tablespoons sweet chili sauce
- 4 hamburger buns
Instructions
- Start by making the candied jalapeños. In a small pot, add the vinegar, sugar and garlic powder over medium heat and boil until the sugar dissolves, 10 minutes. Add the peppers and cook for another 4 minute. Remove the peppers with a slotted spoon, placing them in a small bowl. Continue to cook the liquid until reduced by half, 7 minutes. Pour the liquid back over the jalapeños. Next make the caramelized pineapple. Heat a large skillet over medium heat and melt the butter. Add the pineapple rings and cook until golden and caramelized, 5 minutes per side. Next make the burgers. In a medium bowl, add the meat, salt pepper and minced garlic and combine. Form into 4 equal patties. Grill the burgers or cook in a large skillet with a tablespoon of melted butter over medium-high heat, 5 minutes a side. Once almost done, add a slice of cheese to the top of each and cover, allowing to melt. Transfer to a plate. Wipe the skillet clean and add the buns, toasting until slightly golden. Finally in a small bowl, stir together the mayo and sweet chili sauce. To assemble the burgers, spread a tablespoon of sweet chili mayo on top of each of four bun bottoms. Place the burgers on each bun and top each with a slice of bacon, pineapple ring and spoonful of candied jalapeños. Top with remaining buns and enjoy!
