Bacon Almond Brittle

Ingredients
- 1 cup sugar
- 1/3 cup light corn syrup
- 2 tablespoons water
- 1/4 teaspoon salt
- 1 1/2 cups unsalted almonds, coarsely chopped
- 8 slices bacon, cooked and crumbled
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
Instructions
- Line a baking sheet with parchment paper. In a large pot, heat the sugar, corn syrup and salt over medium heat until the sugar dissolves, 5 minutes. Add in the almonds and cook until golden brown, 10-15 minutes. Meanwhile, cook the bacon until crisp in a large skillet. Transfer to paper towel lined plate and then to cutting board. Chop coarsely. Add to pot along with vanilla extract and baking soda. Immediately spread mixture onto baking sheet. Let cool completely, 1 hour. Break into whatever size pieces you prefer and serve!
