Asparagus & Ham Carbonara

Ingredients
- 2 eggs
- 2/3 cup grated Parmesan cheese
- 3/4 pound spaghetti
- 1 bunch asparagus, halved lengthwise and cut crosswise into 2-inch pieces
- 2 tablespoons olive oil
- 5 slices bacon
- 3 cloves garlic, minced
- 1/4 cup dry white wine
Instructions
- In a large bowl, beat together the eggs and cheese. In a large pot of boiling, salted water, cook the pasta until al dente, 12 minutes. Add the asparagus during the last minute of cooking. Drain, reserving 1/2 cup of the cooking water. Add the hot pasta and asparagus to the egg mixture, tossing quickly to coat. In a large pan over medium-high heat, add the olive oil. Chop the bacon and cook until crisp, 5 minutes. Add the wine and cook until reduced, 5 minutes. Add the pan to the bowl of pasta and season with salt and pepper. Add pasta water if too thick to thin sauce.
