Apricot, Pistachio & Sesame Brittle

Ingredients
- 1 cup sugar
- 1/2 cup light corn syrup
- 1 tablespoon butter
- 1 teaspoon baking soda
- 1/2 cup pistachos, chopped
- 1/3 cup dried apricots, chopped
- 2 tablespoons sesame seeds
Instructions
- Coat a large baking sheet with tin foil and spray with pam. In a medium pot over medium heat, cook the sugar, syrup and a pinch of salt until golden, 10-13 minutes. Remove from the heat and add in the butter and baking soda. Immediately pour onto the baking sheet (mixture will bubble up). Top with pistachios, apricots and sesame seeds and using your fingers or a spatula, press down. Cool for 20 minutes before breaking into pieces.
