Apricot Oatmeal Muffins

Ingredients
- 2 1/2 cups flour
- 3/4 cup light brown sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup oats
- 1 1/2 cups dried apricots, chopped
- 1 stick butter, plus 1 tablespoon melted
- 3/4 cup boiling water
- 2 eggs, beaten
- 1 cup almond milk, (or whole milk)
- 1 apricot
- 2 tablespoons sugar
Instructions
- Preheat oven to 400 degrees and grease 2 muffin sheets. In a large bowl combine oats, dried apricots, butter, and boiling water. Stir until butter is melted, 5 minutes. In a separate large bowl combine flour, brown sugar, baking powder and salt. When the oats mixture is cooled, stir in milk and eggs. Add the wet to the dry ingredients and fill muffin tins 2/3 full with batter. Sprinkle the batter with the sugar and top each with a thin slice of apricot. Brush each apricot slice with the melted butter and bake for 20 minutes or until a toothpick comes out clean.
