Cupcakes
- 1 stick butter, melted
- 2 eggs
- 2/3 cup light brown sugar
- 1/3 cup sugar
- 1/3 cup milk, or almond milk
- 1 tablespoon vanilla extract
- 1 1/2 cups flour
- 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 apples, chopped fine
Frosting
- 1 stick butter
- 1 cup dark brown sugar
- 1/3 cup heavy cream
- 1/4 teaspoon salt
- 2 cups powdered sugar
Instructions
- Preheat oven to 350 degrees. Line muffin pan with baking cups and set aside. In a large bowl, whisk together the melted butter, eggs, sugars, milk, and vanilla until smooth. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Slowly add the dry ingredients to the wet until incorporated. Add in chopped apples (batter will be chunky and this is ok). Fill each baking cups 2/3 full and bake for 22-25 minutes or until toothpick comes out clean.
- While muffins are baking, make the frosting. Melt the butter in a large saucepan over medium heat. Once melted add brown sugar, heavy cream, and salt. Stir constantly until sugar is dissolved, 7 minutes. Take off heat and slowly add in powdered sugar, 1/2 cup at a time. Frosting should be pretty thick (add more powdered sugar if needs thickening and milk if needs thinning). Wait till cupcakes are completely cooled to frost!
