Apple Butter Coffee Cake

Batter
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick butter, softened
- 1 cup sugar
- 2 teaspoons vanilla
- 2 eggs
- 1 cup sour cream
- 1 cup apple butter
Topping
- 3/4 cup flour
- 2/3 cup brown sugar
- 1 teaspoon cinnamon
- pinch of salt
- 1/2 cup pecans, chopped and toasted
- 5 tablespoons butter, softened
Instructions
- Preheat the oven to 350 degrees and line an 8X8 inch baking dish with foil, spraying the foil with pam. In a small bowl, combine the flour, baking powder, baking soda and salt. In a large bowl, beat the butter and sugar together until fluffy, 3 minutes. Add in the eggs, one at a time. Add in the vanilla and mix until combined. Add half of the dry ingredients to the wet, then the sour cream, then the remaining dry ingredients, stirring after each to combine. Spread the batter in an even layer into the pan. Top with the apple butter, spreading until even. To make the topping, combine all ingredients in a bowl and mash together with a fork until incorporated. Sprinkle on top of the apple butter in an even layer. Bake for 1 hour or until a knife inserted into the center comes out clean and the topping is browned. Allow to cool completely before lifting out of pan and cutting into squares, 1 hour. Reheat in the microwave if you wish to serve warm.
