Apple, Bacon & White Cheddar Mac & Cheese

Ingredients
- 6 slices bacon, cut into 1/4 inch pieces
- 2 apples, peeled, cored and cut into 1/2 inch pieces
- 2 leeks, white and green parts thinly sliced
- 3/4 macaroni
- 4 tablespoons butter
- 1/4 flour
- 3 cups milk
- 8 ounces sharp white cheddar, shredded
- 1/3 cup parsley, chopped
Instructions
- Preheat the oven to 350 degrees and spray a 8X11 pan with pam. Cook the pasta according to the package instructions, draining and returning back to the pot. In a large pan, cook the bacon over medium heat until crisp, 10 minutes. Transfer to a paper towel lined plate. Remove all but one tablespoon of the grease and add in the apples and leeks, cooking until soft, 5 minutes. In a medium pan over medium heat, melt the butter. Add the flour and cook, whisking for 1 minute. Add in the milk and cook until thick, 10 minutes. Remove from the heat and add in 1 1/2 cups of the cheese, whisking until smooth. To the pasta, add the sauce, apples, leeks, parsley and 3/4 of the bacon. Season with salt and pepper. Top with the remaining 1/2 cup cheese and bake for 30 minutes or until browned and bubbly. Sprinkle with the reserved bacon and serve.
