Ingredients
  1. 2 cups flour
  2. 3/4 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 1 cup sugar
  5. 1/4 cup butter, softened
  6. 2 eggs
  7. 2 bananas, extremely ripe
  8. 1/3 cup plain yogurt
  9. 1 teaspoon vanilla extract
  10. 1 cup slivered almonds, toasted
  11. 1/2 cup milk chocolate chips
  12. 1/2 cup sweetened shredded coconut
Instructions
  1. Preheat the oven to 350 degrees and spray a bread pan with pam. In a small bowl, combine the flour, baking soda and salt. In a large bowl, cream together the sugar and butter until fluffy. Add the eggs one at a time, beating to combine. Add the bananas, yogurt and vanilla, beating until combined. Make sure the bananas are super ripe (the riper they are, the stronger the banana flavor). Add in the flour mixture, 1/2 at a time, beating to combine. In a small pan over medium heat, toast the almonds until slightly browned, 3 minutes. Fold into the batter along with the chocolate chips and coconut. Pour the batter into the bread pan and bake until a knife inserted into the center comes out clean, 65-70 minutes. Allow to cool completely before removing from the pan, 1 hour.
